CHILLI CHEESE TOAST
Ingredients:
Whole Wheat Bread - 4 to 6 slices
Capsicum/Green bell pepper - 1 medium, chopped finely
Onion - half of a small one, chopped finely
Cheese (mozzarella/pepper jack) - 4 to 6 oz, shredded (or to taste)
Butter/Margarine - 1 tbsp
Tomato Ketchup - to taste
Red chilli powder / Hot sauce - to taste
Method:
1) Preheat oven to 400F.
2) Combine, capsicum, onion, cheese, butter, tomato ketchup, red chilli powder/hot sauce & mix well.
3) Slather this on the bread toasts and bake for about 10 minutes or till crisp at the bottom and the cheese has melted.

A friend of mine introduced me to these 'bread pizzas' some years ago. She always added a sprinkling of Sooji on top, I never figured out why. Yours looks delicious.
